Here's one Completely and Totally inspired by Robyn
Hardsity's chicken bundles and yet different. Thank
you Robyn!!
Small Calzones
for Parties or Home Consumption
8 0z Ricotta Cheese
4 Oz Mozzerella Cheese
2 Tubes of Crescent Rolls from the supermarket
1 Bundle shallots but use 1/2 and hold the rest for
some other thing
1 TBsp Garlic from the jar
4 oz bag of Peperoni
1 egg
a little salt
a tad bit of cumin Just a tiny bit
a little red pepper
1/2 tsp onion powder
1/4 tsp chili powder
If you want to be silly, some milk and a pastry
brush to make them kinda shiny but you dont't have
to
Start by greasing or quick spray of baking sheets (two)and
toss the crescent rolls in the freezer for a minute
while you do this. The crescent rolls become a pain
in the ass if they are even refrigerator warm.
Dice shallots a bit.
In a nice big pretty bowl that you like, mix Ricotta
cheese, shallots, all spices and egg.
Pull the crescent rolls out of the freezer and
unroll them anyway you fricking can onto your baking
sheets but stretching them a tad works well.
Put some mixture from your pretty bowl, less than
you think, like 1.5 TBsps, two peperonis and some
mozz on top. Push and pull your little crescents
together. Brush with milk and bake at 375 for
whatever your oven... you'll know.
Serve with store bought Ragu.
If you can make them look like pretty crescents when
you are done, I congratulate you but I can't. Mine
look like Coach purses from the 90's but hey, My
Father in Law asked for seconds, so cool..

I made this cake for my father. He has always been there for me. Gymanstics practice, school performances, high school graduation…..you name it he was there. Oh wait a minute…...my dad abandoned the family when I was a baby and I haven't seen him in 20 years. This cake is for someone else's dad. My mistake.
