Ingredients:
· 2 skinless, boneless, chicken breasts, pounded thin (pound thin, very important)
· salt and lots of freshly ground black pepper to taste
· 2 beaten eggs
· 1/4 cup extra-virgin olive oil
· 1/2 large lemon, with rind, cut in thin rounds
· 1/4 cup dry white wine, such as Pinot Grigio (any Pinot will do, get what you like to drink to go with dinner!)
· 1/2 cup chicken broth
· 1/2 large lemon, juiced
· 2 tablespoons butter
Preparation:
Heat oil in pan. Meanwhile, dredge pounded chicken breasts in flour and then eggs. Add chicken to pan. Cook for about 3 minutes over medium-high heat and turn and cook 3 minutes on other side. Remove chicken and drain pan. Then to same pan, add butter over medium heat, return chicken to pan. Add white wine.
Then broth and then lemon juice. Add a nice pinch of flour to thicken the sauce and stir around 2 minutes till sauce is thick and no lumps. Season with salt, pepper and lemon rounds. Serve with whatever side you'd like. The side I like to use is this

Can't get rid of recipes! so here we go!
Drunken Cheesy Bread
This is a huge hit every time I make it and usually is just made with the
stuff you've let sit around too long to be much good for anything else!
One old baguette rock hard
Some white wine, doesn't have to be good
Something meaty, deli ham, bacon, pancetta
Swiss cheese
Take the baguette and cut it into cubes (try not to hurt yourself)
cut up your ham or bacon or pancetta (if you're using bacon or pancetta cook it
first please) and toss it in over the cubed bread.
Grate yourself a bunch of swiss cheese and throw it on top of the other stuff.
Douse it in White Wine
Stick the whole shebang in the oven at 450 and cook it until the cheese is brown
and bubbly and there's a fantastic smell coming from your oven. Lift it out into
plates, warn your friends not to burn their tongues and be prepared to receive
looks of adoration.
