Easy BBQ Rib Recipe:

This is how I make ribs for my family and they think I am genius.  Little do they know I cheat:

1 rack of ribs

1 bottle of your favorite BBQ sauce

If possible, remove the membrane from the back-side of the ribs.  It’s not totally necessary (and can be kind of gross), but the meat will fall off the bone much easier without the membrane.  Put the ribs in a glass Pyrex dish and brush on a good amount of the BBQ sauce.  Cover with tin foil.  (Here comes the cheat!)  Put into a 325 degree oven for 1 – 1 ½ hours.  The ribs will be fully cooked, but you are going to finish them up on the grill.  Get some good heat on your grill, brush the ribs with a generous amount of BBQ sauce and put it down on the grill.  You’re looking for the grill to sear the BBQ sauce and really make it caramelize.  Do this for about 5 minutes, turning often and basting with BBQ sauce each time you turn it.  Remove from the grill and enjoy!!

This is my favorite meal - super quick and easy. It's awesome for a rainy day.

Cheez-ay Tomato Soup

1 can tomato soup (I am partial to Campbell's - but you can use whatever you like)
1 can of milk (2% works best)
1 cup shredded sharp cheddar cheese
dash of oregano
spoonful of sour cream

Mix the tomato soup and milk over medium high heat until soup is hot. Add the cheddar cheese and oregano. keep stirring until the cheese is all melted. Pour into a big coff-ay mug (one of those insulated ones), add the spoonful of sour cream and enjoy. As the sour cream melts each sip gets you a dab of the yummyness.

(note: although not necessary to put in a coff-ay mug, I find it tastes better that way for some odd reason)
