Skillet Queso

Tastes EXACTLY like the app @ Chili’s – quite a crowd-pleaser, and couldn’t be any easier.

Ingredients:

1 medium-sized block of velveeta cheese

1 can Hormel no-bean chili

1 bag tortilla chips (the scoopy kind recommended)

Directions:

Cut up Velveeta into inch squares.  Put in crockpot.  Open can of chili.  Dump in crockpot.  Turn on crockpot.  Stir every once in a while.  Once it has all melted & blended together,  serve warm with the chips.

Turkey Panini

Take 2 slices of bread, sourdough works good for this..

2 slices of cheese (what ever you have in your refrig)

dijon mustard, spread on the inside of bread, put cheese, turkey, cheese.

I add a few dried cherries in the middle.

Spread some butter on the outside part of bread, and grill it.

Grill it in a grill pan, in a panini press, or something like it.

Take about 5mins from making to eating.

If you don't have Turkey, you could use almost any kind of meat & cheese.

watch while you are grilling, so it doesn't burn.

Hi Todd,

I love your site!  I've been unemployed for too long and these recipes are great.

It's time to share my husband's favorite childhood recipe.  It's his comfort food.  It sounds gross at first, but give it a chance.

I call it Joe's Dip.

Joe's Dip

Equal parts cottage cheese and Miracle Whip.(NOT MAYO!!)
Dash of salt
A TON of pepper.

Mix cottage cheese and miracle whip together.  Add dash of salt and start adding pepper.  I just shake it from the "pour" spout.
This is kinda do it till it tastes right.  I've found that just when I think I have enough pepper, I need to add a little more.  Just keep tasting it.  Joe likes it a little heavy on the pepper and more Miracle Whip than cottage cheese.
His mom used to use it a sandwich spread.  Or enjoy on your favorite cracker.  Saltines work well.

This is an acquired taste.  Totally grossed out when I first made it, I now kinda like it.

Thanks,  Kathleen, from the burbs of Cleveland
