Cajun Tofu Tacos (for all the vegetarians!!)
1 pkg. extra firm tofu, diced small cubes
2 tbsp. vegetable oil
cajun seasoning (to taste)
dash seasoning salt
Cook the above ingredients in a medium frying pan until slightly crispy or at least brown on all sides, making sure the seasonings are coating the tofu. Set aside.
Shape the corn tortillas into taco shells and fry them in oil until either crispy or soft-crispy...
Add 2 cups chopped lettuce or cabbage and any other toppings you would normally put on your tacos:
avocado, cheese, sour cream, salsa, cilantro
Makes about 6-8 tacos
These are really good, and cheap...tofu is only about $1 per pkg. as
opposed to ground beef or turkey, which is usually around $3-4 per pkg.
Not to mention, the fat content of tofu is less than half as much as
meat products.
Plus, you are saving an innocent animal's life...everyone wins!!

Ok - this isn't a real recipe in that I don't recommend serving it for dinner but it is easy.
Next time you're at the movies, get some popcorn, no slimey fake butter slurge on it thank you, and some plain M&M's (or better, bring in some M&M's from the corner store for a whole lot less). Once in your seat, mix a handful of popcorn with some M&M's - it's good! Everyone I've ever told about this initially says, Yuck! at first, but then they try it and become popcorn/M&M junkies too.
I like it because it doesn't get any easier than that considering there was no actual cooking involved and yet it's filling and creative.

Ok, one "real" recipe
Blender Eggs!
Although I am a pretty decent cook (see recipe, above) I can't cook eggs to save my life. I discovered that the only way I can cook them without completely ruining them is to throw them in the blender with the omelet fillings and some milk or water and hit "chop/stir" for a few seconds, that way I don't have to panic over whether or not the middle is still raw, etc when omeletting. And just use a non-stick pan on med-high heat - emphasis on med not high. Once edges cook, push them into the middle using spatula. You can stir and fold and poke like mad, and you know, it actually cooks better this way.
Favorite fillings incl. a spoonful of pesto sauce and mushrooms or bits of smoked salmon and dill ripped up with goat cheese. Boys like pre-cooked bacon and chedder cheese. The blender part makes them fluffy. Avoid too watery flavorings like salsa - makes the eggs curdle and weird chunky style. Anyone trying to stick to one of those all-protein diets will appreciate an easier way to cook eggs for the 100th time.

Following is a kick-ass recipe. One of the comfort foods my parents
made as a kid, still love it. Side benefit: pretty darn nutritious
too. Also easy to make. What's not to love, I tells ya?
Oh-Good-Heavens Tuna Casserole
(1) 1-pound bag, egg noodles
(1) Can, sweet peas
(1) Can, tuna (works best with Albacore)
2.5 Tbsp mayo (works best with Hellmans)
Cook noodles until tender, per package directions. Drain, rinse with
cold water for 20 seconds or so to stop the cooking process. Put peas
and drained tuna into a large bowl. Add noodles. Add mayo. Mix
until
all ingredients evenly distributed. Eat.
Become enraptured-ly full.
Repeat as desired. :)

Gourmet Ramen Noodles
Yes, you too can make that essential (cheap, cheap, cheap) staple slightly more
nutritious, and even taste better! My two year old likes it, too. Fast and easy!
1 package ramen noodles (whatever flave's
yer fave...I like Oriental)
frozen corn
frozen peas
baby carrots (You can buy one bag of frozen stuff that has all three of these
veggies mixed together)
green onions
sesame oil (this is WORTH IT. One little bottle lasts a long time and makes lots
of things yummier)
cilantro (to really posh it up)
soy sauce
Heat water. Add a splash of soy sauce. When the water boils, throw in a small handful each (maybe 1/3cup total) of corn, peas, and cut up carrots. When the water comes back to a boil, throw in the noodles (it's bad luck to break them. long noodles=long life). Boil for three minutes. Drain off however much water you usually do, and add the mystery powder packet, some sliced green onions, a few drops of sesame oil, and 6 or 7 leaves of cilantro, torn up. Stir it up, eat it up.
