Hey tOdd... Greetings from Syracuse, NY! I have 2 teenage boys who consume the most massive quantities of food I've ever seen. I'm flabbergasted daily at their caloric intake...wow! That said, I'm always looking for a recipe that doesn't cost much and can be made in 20 minutes or less. This is a real simple recipe that we made up and it fits the bill perfectly... we call it the Mexican Stuff.

The Mexican Stuff
1 can corn
1 can diced tomatoes with green chilis
1 can beans (black are best)
2 cups prepared rice
2 chicken breasts, diced- tastes great without this if you're doing the vegetarian thing
shredded cheddar cheese
sour cream
flour tortillas

Get the rice going first. Instant is fine. In a skillet, fry the chicken cubes in a little oil until no longer pink. Add the corn, tomatoes and beans and heat through. When rice is done, add that, too. Stir well. Cover the top with a handful or two of cheese, put the cover on the pan for a minute so the cheese will melt. Throw the tortillas in the microwave for a few seconds each to heat. Fill them, slap some sour cream on top and enjoy! If you're feeling really ambitious, smash up an avocado with a few liberal shakes of garlic added and you have some homemade guacamole, too.

YUMMY ZUCCHINI

WHAT YOU NEED:

BIG FRYING PAN,
SPATULA,
ABOUT 4 CUPS OF WASHED AND SLICED ZUCCHINI (ABOUT 1/4-1/2" WIDE SLICES),
A STICK OF BUTTER,
SALT AND PEPPER TO TASTE,
OTHER VEGGIES IF YOU WANT (LIKE SQUASH, CARROTS, CELERY)
MELT THE BUTTER IN THE PAN, TOSS IN ALL THE ZUCCHINI AND STIR AROUND UNTIL IT ALL HAS BUTTER ON IT, ADD OTHER VEGGIES IF YOU WANT, ADD SALT AND PEPPER, STIR AROUND AGAIN, PUT THE LID ON THE POT AND CHECK ON IT VERY FEW MINUTES TO STIR. IT'S DONE WHEN IT'S NOT TO FIRM, NOT TO MUSHY.

Here's two easy recipes that I think anyone would enjoy.
They are easy & tasty and the fish one would be great if you need to suck up to Mom or Dad for Mother's or Father's Day dinner.

Chili Burgers
(4 servings) (20 minutes to table)

1 pound lean ground beef
2 teaspoons chili powder
1 (15 oz.) can HORMEL chili with beans
4 large hamburger buns, split, buttered & toasted
½ cup shredded cheese, American or Cheddar
1 can (3 oz.) French fried onion rings
Fresh baby carrots & broccoli/Ranch dressing--optional

In a bowl, combine beef & chili powder. Shape into four patties. Cook as desired.
Meanwhile, in microwave--or small saucepan--heat chili as directed on can.
Place cooked burgers on toasted bun bottoms, top with chili, then cheese, then onion rings. Replace bun tops.
Serve with fresh baby carrots & broccoli with ranch dressing or French fries.

Mother's (or Father's) Day ~ Crab Topped Fish Fillets~

(serves 4) (30 minutes to table)

1 pound whitefish fillets (cod, haddock,etc)
Salt and pepper to taste
1 can crabmeat (6 oz.) drained & flaked ~or~ 6 oz. artificial crab meat, chopped up
½ cup Parmesan cheese
½ cup mayonnaise
1 teaspoon lemon juice
Paprika--optional
1/3 cup slivered almonds, toasted, optional
Rice pilaf--optional

Place fish in a greased or sprayed 8 inch square baking dish. Sprinkle with salt & pepper.
Bake uncovered at 350 degrees for 18-22 minutes--or until fish flakes easily when pierced with a fork.
Meanwhile, while fish is cooking, in a bowl combine: crab, cheese, mayo & lemon juice.
Drain cooking juices from baking dish carefully and discard.
Spoon crab mixture evenly over top of fish fillets.
Broil five inches from heat source for about 3 to 5 minutes watching at all times so as not to burn!
Topping should be lightly browned. Remove from oven and sprinkle with paprika and almonds--if desired.
Serve with rice pilaf.
