Hi!

Thanks for all the great new pirogie recipes!  I'll have to try them sometime.  I make fried sauerkraut and onion, potato with cheese (usually cheddar, parm, or a combo), and lekvar (prune butter).  You can use Baker's or Joy filling.  If you have an ethnic section in your store, the lekvar may be found in the Jewish aisle.  There is a Hungarian brand in a jar with a blue label, but I'm not sure what the name is. 
 
If all else fails, I would buy some pitted prunes and boil them until they are even mushier.  Put them in a food processor.  You may have to add some cornstarch to thicken it up like a paste or peanut butter type consistency.  I normally put about a teaspoon to a half teaspoon in the middle of my dough. 
 
Use your basic pirogie dough (flour, a little olive oil, and eggs, a bit of salt).  I normally start out with 5 C of flour to 4 or 5 large eggs and just enough water to combine.  The water should be lukewarm, but not hot.  Oh, make sure the eggs are room temp.  Knead the dough until it is nice and soft.  Let it rest under a bowl to get it to proof.  It will be warm, soft, and squishy!  You won't even need to use water to seal them up.

I usually make pirogies a few times a year, definitely for Christmas Eve, and maybe during Holy Week before Easter.  I saute onions for the potato pirogies.  My husband and son like to dip them in sour cream.

Did anybody ever find out where to buy the Hunt's chili beans?? Can we buy it straight from Hunts? In cases maybe?  I too have looked all over Stater Bros, Ralphs, Vons etc. (I live in Riverside CA) Please help.....

I was doing a video shoot this past weekend.  We had some tech problems so
I ran and got supreme tacos from Taco Bell for the actors, and I ended up
with about a dozen left over.  They don't keep well in the fridge, so I
started experimenting.  This was today's lunch:

One cup cooked pasta (I used Cremette's fettuchini)
Heated entrails of one leftover Taco Supreme (minus the lettuce)
One pack of Mild Sauce

Mix it up

Hangover Cure on Toast

2 Tablespoons butter--the real deal please
2 Tablespoons flour
1 cup of milk
2 slices American Cheese (optional--but I do it)
1 cup cooked chopped ham, deli ham is fine--cubed up
Toast


In a saucepan, melt butter over low heat, stirring the whole time. Add
flour & it will quickly become paste, mash it a bit, stir around while
SLOWLY adding the milk--stirring the whole time.
Stirring makes it not get lumpy so do it.  When it seems smooth, add
cheese slices, & stir until smooth again--then add the ham cubes.
Cook over low heat just until ham is warm too.
Spoon this creamy, cheesy ham gravy over toast & eat it until you feel
better.

Some people have jobs and will love this easy breakfast when they need to get out the door in a hurry.  It's also good to have on hand for the always hungry kids in your life.  Too easy to be so good--just like Mom would make if she still fed you.

EAT ME FOR BREAKFAST WRAPS
makes 5 wraps (enough for breakfast for the whole week for about $4)
 
7 eggs
2 Tablespoons milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 Tablespoon oil
1 cup shredded cheese, I like cheddar, but use what you love
1 cup diced cooked ham (lunch meat ham is fine)
5 flour tortillas (8 inch diameter size)
Hot sauce packages from Taco Bell--if desired
 
Mix together eggs, milk, salt & pepper.  In a large skillet, heat oil.  Add egg mixture.  Cook and stir over medium heat until eggs are done.  Stir in cheese and ham.  Spoon this into the tortillas, evenly divided, down the center of each tortilla.  Roll up firmly, uh--like a  big, fat cigar.  Wrap in plastic wrap and put into resealable plastic bag.  Refrigerate for the week.
TO REHEAT:
Remove plastic wrap and rewrap tortilla in a white paper towel.  Microwave on HIGH for 45 seconds. Squirt on a package of Taco Bell hot sauce, if desired.  Serve with a napkin on the way out the door.  Or in bed if you have no job.  It's still just as tasty, and you can nap afterwards.
